Sun-dried Tomato Pesto

I think it’s important to always have a cheat meal. Today I had mine. I can’t eat pizza anymore, obvs, but it’s just such a huge favourite of mine that I HAVE to eat it. I sometimes make a spelt base but I’m going full on gluten free at the moment and so I bought, what I consider to be, the best pre-made pizza base, from M&S. Don’t even try and make one yourself, so hard. I like homemade pizza with a sun-dried tomato pesto, because, well, I do. Now, all pestos have garlic, which, as I’ve told you before is POISON to people like us. So, I whipped up my own and it’s easy and delicious, so don’t fret. The part where I cheated was the cheese. I could have put a hard, ‘safe’, cheese on top but I didn’t, I went for bad-boy mozzarella. That’s my one vice of the day. HARDLY ADVENTUROUS IS IT?

For the pesto you’ll need:

Jar of sun-dried tomatoes in oil (be careful, some contain garlic, read the labels)

1 1/2 teaspoons of pine nuts

1 teaspoons of olive oil if it gets a little sticky

1/2 teaspoon of parsley (or you could use oregano or some fresh basil, I had dried parsley)

Salt and pepper

This quantity was enough for one, fully loaded, pizza. Would serve two for a pasta dish.

Put 4 sundried tomatoes* and rest of the ingredients into a mini chopper and chop until the pine nuts are pretty close to a paste. If it’s not chopping properly add some more olive oil to help loosen the mixture.

Obvi this would be great with just some pasta with a sprinkling of stomach friendly cheese but I wanted pizza and bad-boy cheese so…

*If you have fructose malabsorption it’s recommended you only have 4 sun-dried tomatoes in a day.
